Albariza

A soil formed by diatomaceous deposits, found most prominently in southern Spain. More specifically, this soil is mostly comprised of chalk, with limestone, clay and sand. This soil is found in the Jerez area, especially in the sub-region Jerez Superior, where the Palomino grape thrives for the production of Sherry. This soil is notorious for is water retention properties, storing the rainwater from the wet winter months for the long, dry summer.
