Bottle fermentation refers to the process in which a wine undergoes its second fermentation inside the bottle, producing natural carbonation and fine bubbles. This method, used in traditional sparkling wines like Champagne and Cava, enhances complexity by allowing the wine to age on its lees (spent yeast cells), developing flavors of toast, brioche, and creaminess over time.
