DAC, or Districtus Austriae Controllatus, is Austria’s legal designation for a Qualitätswein that represents the characteristic grapes and style of a defined wine region. Each DAC sets its own rules for permitted varieties, origin, yields, production, and wine style, making it Austria’s equivalent to an appellation-based system such as France’s AOC.
