Palomino is Spain’s principal Sherry grape, valued less for intense fruitiness than for its neutral profile, moderate acidity, and ability to express biological and oxidative aging. In Jerez, it becomes everything from pale, saline Fino and Manzanilla to rich, nutty Oloroso, making winemaking and maturation more influential than the grape’s primary flavors.
