Vin de paille, or “straw wine,” is a rich sweet wine made from grapes dried after harvest to concentrate their sugars, traditionally on straw mats or drying racks before pressing and fermentation. Closely associated with France’s Jura region, it typically shows dried apricot, fig, raisin, honey, spice, and candied-fruit flavors balanced by bright acidity.
