Chablis

Chablis, in northern Burgundy, is devoted almost entirely to Chardonnay, but the wines are usually very different from richer, oak-driven styles. They are typically dry, high-acid, and mineral, with flavors of lemon, green apple, white flowers, and chalk or wet stone. The region is divided into Petit Chablis, Chablis, Premier Cru, and Grand Cru, with increasing concentration and aging potential as you move up the hierarchy. Most basic Chablis sees little or no obvious oak, while some Premier Cru and Grand Cru wines may use older barrels for added texture and complexity. The best examples are prized for their precision, freshness, and ability to express Chablis’ cool climate and limestone-rich soils.
